Sandwich of the Week!

Seriously, I am in love with this meal.  It can be used for breakfast, lunch or dinner.  I have been eating this daily.

-Fried Mushrooms

-One or two fried eggs or egg whites (I like both)

-One of two pieces of low sodium turkey

-Two ounces of shredded or crumbled cheese

-Two slices of bread (I use Pepperidge Farm’s lite 45 Calories)

-Sea salt (I use pink colored)

Easiest using a non-stick pan. Fry mushrooms in light butter or olive oil.  I use Smart Balance. Put toast in the toaster.  Get a bowl out. After frying the mushrooms, lightly salt them and place them in bowl with cheese on top or mixed in.  The heat should slowly melt the cheese.  Then immediately fry the egg.  After that, put the egg on top of shrooms and cheese allowing cheese to melt even more.  Place your toast on a saucer.  Put the turkey on, followed by the contents in the bowl. Slice that Sammy in half and get to munching.  You can use turkey, ham, and tofu, whatever… maybe no meat at all.  It’s still delicious.  I love it!
